There are also numerous cocktails in which our Portamentos are the star ingredient, or can play a supporting role. Our Portamentos' rich and thick consistency lends well to use in or on desserts and other foods. If preferred, our Portamentos can also be served neat at room temperature. Cocktails Besides being perfect in its traditional role, neat and icy after dinner, Hi Blackberry Portamento adds flavor and excitement to many mixed drinks. Blackberry Margarita 2 oz silver tequila 1½ oz fresh lime juice 1 oz fresh orange juice 1 oz Hi Blackberry Port 1 tsp light agave nectar 1 lime wedge 1 blackberry Fill a small cocktail shaker with ice. Add tequila, freshly squeezed lime, orange juice, Hi Blackberry Port, and agave nectar. Shake vigorously. Strain into a salt-brimmed glass and garnish with lime wedge and blackberry. Blackberry Mudslide 2 oz Hi Blackberry Port 2 oz vodka 2 oz light cream 2 oz simple syrup 1/2 cup of crushed ice Whipped cream 1 perfect blackberry In a blender, combine Hi Blackberry Port, cream, vodka, syrup, and crushed ice. Blend until smooth. Pour into glass and garnish with whipped cream and blackberry. Orange-Blackberry Martini 1 oz Hi Blackberry Port 2 oz mandarin vodka Two blackberries Shake (don’t stir) the Hi Blackberry Port and vodka together vigorously in crushed ice, strain into a martini glass, and add the two blackberries on an olive stick. Appleberry Cider Add 2 oz of Hi Blackberry Port to a glass of your favorite (preferably sparkling) hard apple cider. Garnish with a cinnamon stick. Blackberry Martini 1 oz Hi Blackberry Port 1 oz vodka 1 oz light cream (optional) One blackberry Mix the Hi Blackberry Port, vodka, and cream together with crushed ice, put the blackberry on an olive stick into a martini glass, strain the mixture over the blackberry. Blackberry Breeze ½ oz fresh lime juice 2 oz gin 1 oz Hi Blackberry Port 4 oz seltzer 2 blackberries Pour liquids into glass. Add several ice cubes. Garnish with the blackberries. Blackberry Cosmo ½ oz fresh lime juice 1 oz cranberry juice 1 oz Hi Blackberry Port 1 ½ oz vodka citron 2 perfect blackberries Shake (don’t stir) the lime juice, cranberry juice, Hi Blackberry Port, and vodka citron together vigorously in crushed ice, put the two blackberries on an olive stick into a martini glass, strain the mixture over the blackberries. Blackberry Gin & Tonic 2 oz gin 1 oz Hi Blackberry Port 4 oz Tonic water Fresh mint ½ of a lime 1 perfect blackberry Squeeze the juice form the lime into a short glass. Muddle several mint leaves in the lime juice. Add several ice cubes, the lime, gin, Hi Blackberry Port, and tonic water. Garnish with the blackberry. Blacktoddy 5 oz hot spiced apple cider 2 oz Hi Blackberry Port 1 oz light rum Rim glass mug with cinnamon sugar. Add ingredients, stir, and garnish with a cinnamon stick and an orange slice. Desserts Our blackberry Portamento turns ordinary desserts into culinary adventures; Blackberry Sundae. Pour over one scoop of vanilla ice cream and garnish with whipped cream and a blackberry. Blackberry Milk Shake Add 2 oz Hi Blackberry Port to a glass of whole milk and shake vigorously… for a drink that tastes exactly like blackberry ice cream. Blackberry Snow Cone Use Hi Blackberry Port in place of the syrup in a snow cone. Other Foods The versatility of the Hornby Island Estate Winery Blackberry Port "Super Black” is unsurpassed! Pancakes/Waffles. Pour it on pancakes and waffles instead of maple syrup. Chicken Blacksala 2 lbs. chicken breasts, sliced thin or tenderized. 1/3 cup flour seasoned to taste (salt, pepper, paprika, etc.). 2-3 tablespoons extra virgin olive oil. ¾ cup Hi Blackberry Port 2 cups fresh mushrooms. Coat chicken in flour mixture and brown all sides in olive oil. Add mushrooms and Hi Blackberry Port, and sauté until sauce thickens.
